SQUASH CASSEROLE 
6 squash
1/4 c. chopped onion
1/4 c. bell pepper
1/2 stick melted butter
1/2 c. thick and chunky salsa, or more if you like it hot and spicy
Salt and pepper to taste
1 c. grated cheese
1 c. cracker crumbs

Wash and slice squash. (I mix yellow and zucchini squash for color and taste). Slice squash and cook with onion and pepper until almost tender, drain well and put into greased casserole dish, or one sprayed with Pam. Add salt, pepper, butter, salsa, sprinkle top with cracker crumbs, then top with cheese. Bake at 350 degrees for about 30 minutes, or until bubbly.
