COCONUT MACAROONS | |
2 c. grated coconut 1/2 c. sugar 2 egg whites 1/2 tsp. vanilla 1/8 tsp. salt Combine coconut and sugar in mixing bowl. Stir in egg whites, vanilla, and salt; mix well. Divide mixture in half. Form two 10-inch rolls. Cut into 1-inch slices. Place, cut side down, on ungreased cookie sheet. Bake at 325 degrees for 20 to 22 minutes or until golden brown. Cover cookie sheet with a damp cloth; let stand for 1 minute. Makes 20 cookies. |
