COCONUT MACAROON COOKIES 
1 pkg. Duncan Hines sugar cookie mix
2 egg whites, divided
1 tsp. coconut flavor or vanilla extract
1 3/4 c. flaked coconut, divided
Red candied cherries, halved

Preheat oven to 375 degrees. Combine cookie mix, 1 egg white, coconut flavor or vanilla extract and 1/2 cup coconut in large bowl. Stir until thoroughly blended. Shape dough into 1 inch balls. Dip into remaining egg whites. Roll in remaining coconut.

Place on ungreased baking sheet. Press candied cherry half into center of each cookie. Bake at 375 degrees for 8 minutes or until coconut is light golden brown. Cool 1 minute on baking sheet. Remove to cooling rack. 2 1/2 dozen cookies.
