COCONUT MACAROON COOKIE 
1 c. vegetable shortening
2 c. brown sugar, firmly packed
2 eggs, well beaten
1 1/2 c. all-purpose flour
1/4 tsp. baking powder
1/2 tsp. salt
1/2 tsp. baking soda
2 c. flaked coconut
2 c. oatmeal
1/2 c. pecans

Preheat oven to 375 degrees. Cream shortening and sugar until light and fluffy. Add eggs, mix well. Combine flour, baking powder, salt and soda. Add to creamed mixture. Add oatmeal, coconut and nuts. Drop by teaspoonfuls on a slightly greased cookie sheet. Bake until done.
