2 c. white beans
1/4 lb. salt pork (rinse)
Soak in cold water at least 6 hours. Parboil slowly 10 minutes, after they start. Store the salt pork in cubes, not through the rind. 1/2 tsp. baking soda 1 tsp. dry mustard 1/2 tsp. ground cumin 1/2 tsp. salt 1/4 c. sugar 1/4 c. molasses
Place all of these ingredients in an earthen ware, or very heavy deep pan. Pour boiling beans on top. Place scored pork on top and cover. Place in 250 degree oven to bake at least 7 hours. It's a good plan to let them cook overnight. Starting at 9:00 p.m. until 8:00 a.m. Keep water (hot) just to cover about an inch. This is a recipe that was developed by the late Virginia Alexander.
