ZUCCHINI-OATMEAL MUFFINS 
3/4 c. oil
4 eggs
2 1/2 c. flour
1 1/2 c. sugar
1/2 c. oatmeal
1 tbsp. baking powder
1 tsp. salt
2 c. zucchini

Beat together oil and eggs with a fork. In large bowl mix together remaining ingredients. Add egg mixture and stir in 2 cups finely shredded zucchini. Put in muffin tins. Sprinkle with sugar and cinnamon. Bake 25 minutes at 400 degrees. Makes 18 muffins.
