ZUCCHINI-CHEDDAR MUFFINS 
1 c. chopped onions
1/4 c. butter
2 1/4 c. Bisquick
1/4 c. milk
3 eggs
1 1/2 c. shredded zucchini
5 oz. shredded Cheddar cheese

Grease muffin tins. Saute onion in butter until soft. Cool. Mix onion, butter, Bisquick, milk, and eggs. Beat 1 minute. Stir in cheese and zucchini. Divide into 12 muffins. Bake at 400 degrees for 20-25 minutes. Cool 5 minutes. Remove from pan.
