BEEF TONGUE 
It's expensive, but there are no bones - it's all meat.

1 (2-3 lb.) beef tongue
1/4 tsp. oregano
1/2 tsp. salt
1/4 tsp. marjoram
1/4 tsp. summer savory

Rinse tongue. Place in pressure cooker. Add water to cover. Add the remaining ingredients. Pressure cook 1 hour at 10 or 15 pounds. Remove from pan and allow to cool enough to handle. Remove connective tissues and skin. The skin should come off easily. Cut into 1/4-inch slices across it's length. At this point, the meat can be used as you desire. It makes excellent "cold cut" sandwiches, fried like "Canadian bacon", or with various sauces.

I'm curious what part of the country you're in... Here in the Midwest, I've found that beef tongue is consistently one of the cheapest cuts of meat around--which is great because we love it!

Wow! A 2-3 lb. tongue was last I saw in northern idaho... Check a butcher instead of a grocer. If they butcher whole beef they will have the tongue along with it and often toss them. Once cooked, dice it into very thin strips and brown a little with chile powder and lime, then toss with sauted onion and peppers. Makes an awesome taco or burrito filling.

That's Exactly WHY it is so expensive and difficult to find: The Mexican restaurant trade (which, I love my locals!) and "food trucks" serving tacos buy it all up. I grew up on it and love it, but it is difficult to find it anymore, and expensive when found... Happy I have a couple in the freezer.

As a child in the 50's my dad would kill cows and bulls for the local butcher and his pay was to receive the kidney's, tongues and livers. We loved it but now? Can not find it in Indiana.

In Indiana you can find it at meat slaughtering House in Cedar Grove. Price is right. If they have butchered a cow or steer you pick it up almost free.

Have always had salted tongue, boiled and then pressed under a heavy weight over night to make into a round shape (choose container suitable for size). Before the BSE scare it was always really cheap here but now its about £12 -£15 for an average size 3-4 Lb tongue and when its cooked it really shrinks :( but its worth it!!!

My grandmother made it sweet and sour. I got one 10.00 in NY it costs and that was cheap, I love it. Was thinking of ideas what to serve with it. Cant eat it with vinegar so maybe an idea different
