BEEF TONGUE 
It's expensive, but there are no bones - it's all meat.

1 (2-3 lb.) beef tongue
1/4 tsp. oregano
1/2 tsp. salt
1/4 tsp. marjoram
1/4 tsp. summer savory

Rinse tongue. Place in pressure cooker. Add water to cover. Add the remaining ingredients. Pressure cook 1 hour at 10 or 15 pounds. Remove from pan and allow to cool enough to handle. Remove connective tissues and skin. The skin should come off easily. Cut into 1/4-inch slices across it's length. At this point, the meat can be used as you desire. It makes excellent "cold cut" sandwiches, fried like "Canadian bacon", or with various sauces.

YUM TONGUE! 10.99 for a whole tongue (large) in New Zealand at my local butcher. It would weigh about 2.5 pounds or so. Its divine, all meat and is easy to prepare. I'm boiling one right now. I'll cut it into slices, dredge it in milk, egg and panko (Japanese) bread crumbs and fry till golden brown in rice brain oil. I'll then serve it with creamy horseradish/mayonnaise sauce, veggies, baked potatoes and salad!

Fortunate enough to work with a farmer's wife. When they butcher a cow, she always brings me in the tongue and the oxtail. No one in their family likes the taste, or "thought" of it.

In the Old Country, if you don't overdo the liquid, then the stock will also settle as jelly (it's the point at which commercial gelatine like Jello comes together with true jellies), so by adding some of the stock to the cooked, peeled and de-gristled tongue in a straight-sided mould (a souffle dish is excellent) and pressing it (put a saucer nearly the same size on top and a couple of kilos of something heavy on top of that) while it cools overnight, then you add a preservative, keep the moisture content up, and retain some more of the flavouring.

Costco, Vallejo CA has 2 beef tongue/pkg. (5.79 lbs @ $3.99/#). Thank you for recipe - every time my Dad butchered we had tongue cooked in the pressure cooker--this is close to what my Mom did with tongue.

This is a dish I grew up on from Colorado to Chicago. In Vegas ours is $3.29 lb. When my dad was a butcher in Colorado (many years ago) this was virtually free, considered scrap meat. Sandwiches are fantastic but our favorite is making a gray from juice and serve with mashed potatoes and a veggie like corn/beans/peas. Real comfort food. And completely agree, it is all meat and very little waste. Something to consider when purchasing. To Beatriz in Vallejo, thanks for the tip about Costco - will look for it and ask their butchers. Purchased @ Smith's in Las Vegas.

Brisbane Australia I buy a small tounge for about $3.30 USD each. I normally buy 3 cook them, cut them into chunks and press them in a meat press. Love them as a cold meat.
