ANTARAM'S SUMMER SQUASH 
Preparation time: 1/2 hour.

4 or 5 sm. tender summer squash, cubed
1 med. to lg. onion, chopped
1/2 c. long grain rice
Salt and pepper to taste
1 tsp. sugar (optional)
1/4 c. butter
2 tbsp. water

Saute onions in butter until transparent - stirring constantly - add cubed summer squash and water, salt and pepper and rice. Cover and lower heat to simmer immediately. Cook until rice is done - add teaspoon sugar at this point and stir and serve. Serves 6. Excellent side dish.
