SUMMER SQUASH NIBBLES 
2-3 sm. summer squash
1 egg
1/2 c. flour
Salt and pepper to taste
Enough butter for frying

Melt enough butter for frying the amount of squash you have. Beat egg in bowl. Mix flour and salt and pepper in a shallow pan or pie plate. Slice summer squash in 1/4 inch slices. Egg and flour each slice and fry until crispy and golden brown. Serve hot immediately. Good to try for children who hate vegetables.
