BELGIAN STEW 
2 tbsp. vegetable oil
1 1/2 lb. beef, cut in 1" cubes
1 1/2 c. water
1 c. minced onion
1 clove garlic, minced
1 1/2 tsp. salt
1/4 tsp. pepper
1 tbsp. sugar
1 tbsp. vinegar
1/8 tsp. nutmeg
4 potatoes, cut in lg. chunks
4 carrots, cut in wide chunks

Brown meat in vegetable oil. Reduce heat. Add water, onion, garlic, salt, pepper, sugar, vinegar and nutmeg (may add more spices). Cover and cook until meat is nearly done (1 1/2-2 hours). Add potatoes, carrots and additional liquid if necessary.

Cover and cook until vegetables are tender. This does not have a gravy type of finish. The meat and vegetables are coated with the flavor. Serves 4-6.
