RICE WITH RAISINS AND PINE NUTS | |
1 tbsp. butter 3 tbsp. minced onion 1/2 tsp. minced garlic 1 c. uncooked rice 1 tbsp. butter 1/4 c. raisins 1 1/2 c. chicken broth 1 tbsp. vegetable oil 1/4 c. pine nuts Melt 1 tablespoon butter in saucepan. Add onions and garlic; saute until tender. Stir in rice, raisins, and chicken broth. Heat mixture to boiling; cover and simmer 20-25 minutes. Heat oil in small skillet; add pine nuts, stirring constantly until toasted and golden brown. Stir pine nuts and 1 tablespoons melted butter into cooked rice. |
