CHICKEN CACCIATORE 
4 to 6 pieces boneless chicken
1/4 c. shortening
1/2 c. flour
2 c. thinly sliced onion rings
1/2 c. chopped green pepper
1 can tomatoes, drained
1 (8 oz.) can tomato sauce
1 (3 oz.) can sliced mushrooms, drained
1 tsp. salt
1/4 tsp. oregano

Coat chicken pieces with flour and brown in melted shortening over medium heat 15 to 20 minutes. Remove chicken from pan and set aside. Add onion rings and green pepper to skillet and cook until tender. Stir in remaining ingredients. Add chicken to sauce and cover tightly. Simmer for one hour.
