CHICKEN CACCIATORE | |
1/4 c. olive oil 6 chicken breasts 1 med. onion, chopped 1/4 c. bell pepper, chopped 3 cloves garlic, minced 2 cans whole tomatoes, discard juice and chop 1 c. tomato sauce 1/2 tsp. pepper 1/2 tsp. celery seed 1 tsp. oregano 2 bay leaves Salt and pepper chicken and brown in olive oil. Remove chicken and saute onion, bell pepper and garlic. Combine other ingredients in pan. Replace chicken. Simmer covered for 1 hour. Serve over rice. |
