RICE CASSEROLE 
1 c. water
1/2 green pepper, diced
1 stick butter
1 c. rice
1/2 onion, chopped
1 can beef consomm

Preheat oven to 450°F. Cut zucchini in half crosswise; cut each half lengthwise into quarters. Toss with oil, salt and pepper in large bowl. Arrange zucchini on a jelly roll pan in a single layer. Roast 30 minutes, until tender. Transfer to serving bowl.

Serves 8.

Prep Time: 15 minutes. Roasting Time: 30 minutes.
