POULTRY MARINADE 
1/2 c. fresh lime juice
1/2 c. fresh lemon juice
1/2 c. fresh orange juice
1/2 c. olive oil
2 cloves garlic, minced
2 tsp. coarsely ground black pepper
3 crushed bay leaves
3 tbsp. fresh cilantro, chopped
Salt to taste

Combine all ingredients in a bowl or ziploc bag and let stand at room temperature for 30 minutes. Pour over poultry (chicken, turkey, cornish hens) and let marinate 2-3 hours. Makes about 2 cups.
