ROASTED VEGETABLES 
1 lb. green beans
2 yellow squash
4 tbsp. olive oil
2 tsp. salt

Preheat oven to 375 degrees. Wash vegetables. Cut squash in half lengthwise. Snap off ends of green beans. Place in shallow baking dish, spreading out vegetables to single layer. Drizzle with olive oil and salt. Bake 30 minutes or until slightly shriveled. Remove from heat, serve at room temperature.
