ZUCCHINI CASSEROLE 
1 med. zucchini, cut up
1 can (29 oz.) tomato puree
2 tbsp. sugar
Salt & pepper
1 lg. onion, chopped
1 med. green pepper, chopped
Cheddar cheese, grated
Ritz crackers, crushed

In saucepan, saute onion and pepper in a small amount of oil. Add tomato puree, sugar, salt, pepper and zucchini; simmer together 1 hour.

Put into a casserole dish and sprinkle on top with grated cheddar mixed with Ritz crackers. Bake until top is melted at 350 degrees.
