NEW YORK CHEESECAKE 
1 1/2 lb. cream cheese
1 pt. sour cream
1 1/2 c. sugar
5 eggs
1 tsp. vanilla
Juice of 1 lemon
1 3/4 c. graham crackers
1/4 c. chopped walnuts
1/2 tsp. cinnamon
1/2 c. melted butter

Combine graham crackers, walnuts and cinnamon with melted butter. Press mixture into 9 inch spring form pan. Set aside.

Combine cream cheese, sour cream, sugar, 5 eggs, vanilla and juice of lemon. Beat until creamy. Pour into spring form pan that is lined with graham cracker mixture.

Bake at 350 degrees for 1 hour. Turn off oven and open oven door. Let cake sit inside oven for another hour. After cake is at room temperature refrigerate.
