NEW YORK CHEESECAKE 
1 1/3 c. vanilla wafer crumbs
1/3 c. melted butter
1/3 c. sugar
1 tsp. cinnamon
5 - 8 oz. pkgs. cream cheese
1 3/4 c. sugar
3 tbsp. flour
3/4 tsp. grated lemon rind
3/4 tsp. grated orange rind
1/4 tsp. salt
1/4 tsp. vanilla
5 eggs plus 2 yolks, room temperature
1/4 c. heavy cream
Fruit (strawberries, grapes, etc.)
3/4 c. apricot jam,
1 tbsp. orange juice

Prepare crust: Mix together wafer crumbs, butter, 1/3 cup sugar, cinnamon. Press into 9 inch spring form pan. Chill. Beat cream cheese. Combine 1 3/4 cup sugar, flour, lemon and orange rinds, salt, vanilla. Slowly add to cream cheese. Gradually add eggs, one at a time, beating after each. Gently stir in heavy cream. Pour into pan. Bake at 500 degrees for 10 minutes. Turn oven down to 200 degrees and bake one hour. Don't open door. Turn oven off and leave in closed oven until cool or overnight. For topping arrange fruit on top. Glaze with mixture of jam and juice heated and spooned over fruit. Serves 12 to 18.
