SOUR CREAM CUCUMBERS
6 med. sized cucumbers
Salt
6 med. sized onions
1 c. dairy sour cream
1 tbsp. lemon juice
1 tbsp. vinegar
1 tbsp. sugar
Dash cayenne pepper

Peel cucumbers and score with fork tines. Slice thinly into large bowl and sprinkle generously with salt. Let stand until cucumbers appear soft.

After a few hours drain cucumbers. Taste, if too salty, rinse in clear water. Then squeeze all liquid from cucumbers.

Thinly slice onions and separate into rings. Mix well with cucumbers.

Combine sour cream, lemon juice, vinegar, sugar and cayenne. Pour over cucumbers and work mixture through so all are coated.

Cover and chill in refrigerator several hours or overnight before serving. Makes 10-12 servings.
