BEEF & SPINACH QUICHE 
1 unbaked 10 inch pie shell
3 tbsp. butter
1 c. diced peeled onions
1 lb. ground lean beef
1 (10 oz.) pkg. frozen chopped spinach, thawed
3/4 tsp. salt
1/4 tsp. pepper
1/8 tsp. ground nutmeg
2 lg. eggs
1 c. heavy cream
1/2 c. coarsely grated sharp cheddar cheese

Heat oven to 400 degrees. Prick pie shell all over with fork and bake until lightly brown. In skillet melt butter. Add onions and cook until soft, stirring occasionally. Add beef and cook until meat loses its red color. (Drain and discard fat.) Squeeze spinach with hands to remove as much moisture as possible.

In a bowl; mix beef, onions, spinach, salt, pepper and nutmeg. Beat eggs with cream and stir into meat mixture. Pour into pie shell and sprinkle with cheese. With oven at 375 degrees, bake 30 minutes until top is speckled brown and filling is set. Let stand 10 minutes before serving. Makes 6 generous slices.
