FRENCH MARKET SOUP 
1 1/2 c. mixed beans
1 meaty ham hock or ham bone or ham pieces
1 lg. onion
1 clove garlic
1 (28 oz.) can tomatoes
1 pod of green pepper or red (hot) pepper
A few drops of Tabasco sauce
Juice of 1 sm. lemon at end of cooking time
Salt & pepper to taste at end of cooking time

Wash beans and cover with water. Soak overnight, or quick method to cook beans. Put beans in 2 quarts of water, and add other ingredients. (Chicken broth may be used in place of the water.) Cook all day or at least for 4 hours on simmer. May be kept in a covered container in refrigerator. Flavor improves with age.
