EASY CHEESECAKE 
1 (3 oz.) pkg. lemon Jell-O
1 c. boiling water
3 tbsp. lemon juice
1 (8 oz.) pkg. cream cheese, softened
1 c. sugar
1 tsp. vanilla
1 (12 oz.) can chilled evaporated milk, whipped

Graham Crust:

1 1/2 c. graham cracker crumbs
5 or 6 tbsp. melted butter
3 tbsp. sugar

Dissolve Jell-O in boiling water. Add lemon juice and cool. Cream together cream cheese, sugar and vanilla. Add to Jell-O mixture and mix well. In a large bowl, fold whipped milk and Jell-O mixture together. Mix well and pour into cooled baked crust. Sprinkle with graham cracker crumbs. Chill several hours.

Crust: Combine graham cracker crumbs with melted butter and sugar. Mix well and line bottom and sides of 13 x 9 x 2-inch baking dish.

Bake for 8 minutes at 350°F. Let cool.
