1 cup (2 sticks) butter
2 cups brown sugar
2 eggs
2 tsp. vanilla
2 cups grated zucchini
1 tsp. cinnamon
4-5 cups all-purpose flour
2 tsp. baking soda

Preheat oven to 375°F.

Cream butter and sugar. Add eggs and vanilla and beat well. Add zucchini and mix. Add dry ingredients. Drop by teaspoonfuls onto greased cookie sheet.

Bake at 375°F for 10 to 15 minutes or until lightly browned.
