OLD-FASHIONED GUMDROP CAKE
3/4 cup shortening
3 eggs
1/2 cup sugar
2 tsp. baking powder
1/2 tsp. salt
1 tsp. vanilla
1 cup milk
1 cup gumdrops
2 cups all-purpose flour, divided

Preheat oven to 350°F.

Beat shortening and eggs, one at at time, until batter is light and fluffy. Mix dry ingredients in a separate bowl, reserving 1/2 cup of flour.

In another bowl mix the reserved flour with gumdrops (either whole baking gums or sliced gumdrops). This step will prevent the gumdrops from sinking to the bottom of the cake during baking.

Add vanilla to egg mixture and mix well. Alternate milk and dry ingredients until just mixed together - over-mixing will toughen the batter. Last add gumdrops and reserved flour. Mix until just combined.

Pour mixture into a large greased and paper-lined loaf pan.

Bake at 350°F for 1 hour.
