ITALIANO SCALLOPS WITH ANGEL
HAIR
 
1 lb. scallops
2 tbsp. lemon juice
1/8 tsp. salt
1/8 tsp. pepper
1 lg. can tomato sauce (or use Marinara sauce) (see below)
4 oz. can mushroom pieces, drained
2 tbsp. minced onion
1 tbsp. oregano
1/2 tsp. basil
1/4 tsp. thyme

Place scallops in shallow baking pan. Spray with non-stick spray. Sprinkle scallops with lemon juice, salt and pepper and garlic salt.

Broil 3 minutes on each side (6 minutes total). Combine remaining ingredients in small bowl. Pour evenly over scallops. Broil 5 minutes each side (10 minutes total). Serve over angel hair or with zucchini.

MARINARA SAUCE:

2 cloves garlic
1 med. chopped onion
4 tbsp. olive oil
1 bay leaf
2 (16 oz.) cans whole tomatoes
1 (16 oz.) can crushed tomatoes
1 tsp. thyme
1 tsp. crushed red pepper (optional)
1 tsp. oregano
1 tsp. chopped parsley

Saute the onion and garlic until lightly browned. Add tomatoes and spices and cook for 1 hour. Adjust seasoning to taste. Pour over angel hair - add scallops over the top - serve.
