SPINACH MARIA 
2 (9 oz.) pkg. frozen spinach
1 medium onion, diced
1 tbsp. butter
1 can Cheddar cheese soup
ground cayenne pepper or crushed red pepper to taste
1/2 c. Parmesan cheese, grated
1/2 c. Monterey Jack cheese, shredded
bread crumbs

Preheat oven to 350°F. Cook spinach according to package directions and drain off all excess water when done. Sauté onion in butter until tender. Mix all ingredients, except bread crumbs, together. Place in casserole dish sprayed with nonstick cooking spray. Top with bread crumbs.

Bake for 45 minutes.
