CRUNCHY GRANOLA 
2 c. old fashioned oatmeal
1/2 c. shredded coconut
1/2 c. peanuts
1/2 c. wheat germ
1/2 c. hulled sunflower seeds
1/4 c. honey
1/4 c. vegetable oil
1 tsp. vanilla extract
1/2 c. raisins

Thoroughly mix the oatmeal, shredded coconut, peanuts, wheat germ, and sunflower seeds. Mix the honey, oil and vanilla in a separate bowl, and then work the mixture into the dry ingredients. (You can use your fingers, if you feel like it.) Spread the mixture on an oiled baking sheet. Then roast at 325 degrees for 20-30 minutes. Add the raisins just for the last 5-10 minutes of roasting.

To make the granola in the microwave: Use a 3-quart, heat-proof glass bowl and microwave on medium heat for 6 minutes. Stir after 3 minutes or so. Stir in the raisins, and microwave on medium heat for 2 more minutes. Store in a tightly covered container. Serve as a cereal, or use it to top fruit or ice cream.

Since microwave ovens vary in power, you may need to adjust your cooking time.
