FLUFFY YELLOW LAYER CAKE 
3 c. cake flour, sifted
2 1/2 tsp. baking powder
1 tsp. salt
1/2 c. plus 2 tbsp. soft shortening
1 3/4 c. plus 2 tbsp. sugar
2 lg. eggs, unbeaten
1 1/4 c. milk
1 1/2 tsp. vanilla

Preheat oven to 350 degrees. Prepare 9 inch cake pans with oil and flour. Sift together flour, baking powder and salt. Cream shortening with sugar. Add eggs. Blend until soft and fluffy. Add flour, milk and vanilla gradually. Pour into 2 layer cake pans. Bake for 30 to 35 minutes until it springs back when touched. Cool 10 minutes. Frost with your favorite frosting.
