CHINESE ALMOND COOKIES | |
1 c. sugar 1 c. butter 1 egg 1 oz. almond extract 1/4 c. white corn syrup 3 1/4 c. plain flour 1 1/2 tsp. baking soda NO SALT Sliced almonds 1 egg + 1 tsp. water, combined With electric mixer, combine sugar, butter and egg. Mix until light and fluffy. Add almond extract and syrup. Mix well. Combine flour and soda and add to above, mixing well. Pinch up dough, walnut size and form a ball; place on greased cookie sheet and flatten. Place almond on cookie and "paint" with egg-water mixture, using pastry brush. Bake at 350 degrees for 12 to 15 minutes, until tops are barely brown. Loosen from pan immediately and cool. Store in air tight container. Makes 125 cookies. |
