CHINESE ALMOND COOKIES 
1 c. sugar
1 c. butter

Beat until fluffy. Add:

2 egg yolks
1 tsp. almond extract

Blend well and add:

2 c. flour sifted
1 c. chopped almonds

Mix thoroughly. Form one inch balls. Place on ungreased baking sheet. Press down to 1/4 inch thick. Press into center of each cookie one whole almond. Bake at 325 degrees for 15 minutes. Makes 4 to 6 dozen.
