CHINESE ALMOND COOKIES | |
2 3/4 c. sifted flour 1 c. sugar 1/2 tsp. salt 1/2 tsp. baking soda 1 c. butter 1 slightly beaten egg 1 tsp. almond extract 1/3 c. whole almonds Sift together flour, sugar, salt and soda. Cut in butter until mixture resembles cornmeal. Add egg and almond extract. Mix well. Shape dough into 1 inch balls and place on ungreased cookie sheet 2 inches apart. Place an almond atop each cookie and press down to flatten slightly. Bake 350 degrees 15-18 minutes. Cool on rack. Makes about 4 1/2 dozen cookies. |
