TORTELLINI IN A SAUSAGE CREAM
SAUCE
 
1 (8 oz.) pkg. tortellini
1/2 lb. good quality lean bulk sausage
Olive oil as needed
1 clove garlic, minced
1/2 tsp. rosemary
Fresh ground pepper
1 c. light cream
1/3 c. freshly grated Parmesan cheese

Cook pasta according to package directions. While pasta is cooking, brown sausage in a skillet. Depending on the fat in the sausage, add oil if needed to keep sausage from sticking or drain if fat is excessive.

Stir in garlic, rosemary and pepper. Cook a few minutes more. Add cream. When mixture begins to bubble add the cheese. Put tortellini on a warm platter. Spoon sausage over, toss, and serve immediately. Garnish with parsley.
