RED BEANS AND RICE | |
1 lg. onion, chopped 2 tbsp. butter 1 1/2 tsp. salt 1 (16 oz.) can red beans, undrained 1 clove garlic 10 oz. Jimmy Dean mesquite sausage Dash of red pepper Saute onion and garlic in butter. Add sausage thinly sliced, saute 2 minutes. Stir in beans and liquid, salt and pepper. Mash beans partly to give thicker consistency. Heat to boiling, simmer 15 minutes. Serve over rice. Serves 4 to 6. |
