“OVEN ROASTED VEGGIES” IS IN:
NEXT RECIPE:  PIMENTO CHEESE SPREAD

OVEN ROASTED VEGGIES 
1 medium orange pepper
1 medium yellow pepper
1 medium red pepper
2 medium zucchini
1 red onion
2 garlic cloves
2 tbsp. extra virgin olive oil (EVOO)

Preheat oven to 450°F.

Cut peppers zucchini and onion into bite size pieces. Place in a roasting pan or cookie tray. Add minced garlic, olive oil and salt and pepper to taste and mix to coat all veggies.

Roast in middle of oven at 450°F for 30 minutes, stirring occasionally.
