FRUIT COCKTAIL CAKE 
CAKE:

1 1/2 c. flour
1 c. sugar
1 tsp. baking soda
1/2 tsp. salt
1 egg
1 (15 oz.) fruit cocktail, undrained

TOPPING:

1/2 c. brown sugar
1/2 c. chopped pecans

Beat egg. Add sugar. Mix well. Add fruit cocktail and mix. Add dry ingredients and mix. Pour in 9x13 inch baking pan. Mix brown sugar and nuts. Sprinkle over cake. Bake at 350 degrees for 45 minutes for metal pan, 325 degrees for glass pan.

My Aunt has been baking this cake since Home Economics class in the 60's... It's delicious! Try topping it with a confectioners sugar/lemon juice glaze--so good!

Baked this tonight. Delicious!! One of the best I've tried. Moist and sweet. But not so sweet that it makes you pucker when you eat it! Fabulous!

Just made this cake and it turned out delicious! I didn't have brown sugar or pecans, so I skipped the topping. I did add 1 teaspoon of cinnamon, 1/2 teaspoon of pumpkin pie spice, 1/2 cup each of dried cranberries and chopped walnuts to the batter before baking. Also, I used an 8x8 pan instead of 9x13 because that would of been too large. If doubling the recipe then probably would use 9x13 pan. Thanks to the author who posted this very easy recipe!
