FROZEN MOCHA CHEESECAKE 
1 1/4 c. chocolate wafer cookie crumbs, about 24
1/4 c. sugar
1/4 c. butter, melted
1 (8 oz.) cream cheese, softened
1 (14 oz.) can sweetened condensed milk
2 oz. semi-sweet chocolate, melted
2 tbsp. instant coffee
1 tsp. hot water
1 c. whipping cream, whipped

Mix cookie crumbs, sugar, and butter. Pat this mixture into a 9 inch springform pan. Chill. Beat cream cheese until fluffy. In small bowl dissolve coffee in the hot water. Add condensed milk, chocolate, and coffee to cheese mixture. Mix this well. Fold in whipped cream. Pour into prepared pan and freeze 6 hours or more. Garnish with additional crumbs.
