SWEET AND SOUR PORK 
3 lbs. pork tenderloin cut in 1 inch cubes
3 beaten eggs
1 1/2 c. flour
2 tsp. salt
1 tsp. pepper
1 1/2 c. chicken broth
1 qt. pineapple chunks, drained
2/3 c. onion, finely chopped
4 green peppers, cut in 1/4 inch strips
1/4 c. cornstarch
1 oz. soy sauce
3/4 c. brown sugar
1 qt. of pineapple juice
1/2 c. catsup

Dip pork cubes in beaten eggs. Drain and roll pork in flour, salt and pepper which have been blended together. Cook pork in oil 1 inch deep at 350 degrees until golden brown. Remove and place on absorbent paper. Use 2 tablespoons of drained oil to combine with next 4 ingredients (broth, pineapple chunks, onion and green pepper).

Cook 5 minutes, add pork and cook 10 minutes more. Combine remaining ingredients (cornstarch, soy sauce, brown sugar, pineapple juice and catsup). Stir into pork mixture and cook until mixture has thickened and is clear. Serve with rice. Serves 6.
