CRUNCHY CHICKEN SALAD 
1 pkg. cole slaw mix
4 spring onions
1/2 green bell pepper
1/2 red bell pepper
1/2 yellow bell pepper
1 pkg. Ramen chicken flavor noodles
1/2 c. sliced almonds, toasted
1/2 c. sunflower seeds
3 large chicken breasts

Dressing:

1/2 c. oil
3 tbsp. red wine vinegar
2 tbsp. sugar
1 tsp. salt
1/2 tsp. pepper

Combine cole slaw mix, chopped onion and cut peppers all together and set aside. Toast sliced almonds; let cool. Break noodles up and mix with sunflower seeds and toasted almonds and set aside.

Mix dressing. If chicken is not precooked, grill, sauté in butter or cook otherwise. Debone and cut into cubes. Just before serving, combine noodle and slaw mixtures; add chicken and dressing and toss.
