POTATOES IN THE OVEN (A MALTESE
DISH)
 
5 lb. potatoes, sliced in half lengthwise
3 lb. onions, sliced
Water
About 5 heaping tbsp. Crisco or lard
Salt and pepper to taste
Garlic cloves, chopped in lg. pieces (to taste)
Choice of meat: steak or chicken pieces or pork chops

In a baking pan at least 2 inches deep, place Crisco, potatoes, choice of meat, onions and garlic randomly. Add enough water to create a "gravy." Cover entire mixture with salt and pepper. Bake at 350 degrees for 1 1/2 to 2 hours until tops of potatoes brown and meat is cooked, making sure there always is sufficient liquid.
