ALOO SABJI (INDAIN STYLE
POTATOES)
 
2-3 potatoes
1 1/2 teaspoons salt
1/2 teaspoon turmeric powder
1/2 teaspoon red chilli powder (optional)
5-6 teaspoons vegetable oil

Peel the potatoes and cut into bite-sized pieces. Pour 5 teaspoons of oil into a frying pan. Heat pan; when pan is hot, add potatoes.

Season the potatoes with the spices (salt, turmeric powder, chilli). Stir.

Cover pan with a big steel plate (or a heavy cover).

Wait for 3-4 minutes. Your potatoes are ready, Enjoy!

Cooks Note: Using a very heavy cover (several pounds or more, such as when using a cast iron pot) allows less steam to escape, and gives the benefits of cooking under (slight) pressure, making the potatoes more tender.
