AUTHENTIC GERMAN STYLE POTATO
SALAD
 
1/2 lb. (8 strips) bacon
2 1/2 lb. salad potatoes, boiled
1 large onion, diced
2 tbsp. bacon grease
2 tbsp. butter
2 tbsp. sugar
2 tbsp. cornstarch
salt and pepper, to taste
1/4 c. cider vinegar
1 c. water
1/2 tsp. prepared mustard

Cube the bacon, fry on low heat until it is golden brown and crisp. In a bowl, slice boiled potatoes, add onion which has been diced fine and finally add fried bacon.

Drain the skillet of all bacon grease. Place 2 tablespoons bacon grease and butter in the skillet and melt together. Add sugar, cornstarch, salt and pepper. Blend into grease thoroughly. Add cider vinegar, water and mustard. Cook until mixture begins to boil, stirring constantly.

Pour over the potatoes, onion and bacon. Let stand for about 1 hour. This is served warm, but not hot.
