HOT POTATO SALAD (GERMAN STYLE) | |
1/2 c. minced onion 2 tbsp. salad oil 2 tsp. flour 1 tbsp. sugar 2 1/2 tsp. salt Dash of pepper 1/3 c. vinegar 1/3 c. water 5 c. sliced cooked potatoes 1 tbsp. chopped green pepper 1 tbsp. chopped pimento 1 tbsp. chopped dill pickle 1 tbsp. minced parsley 1 tsp. celery seed Saute 1/4 c. onion in oil in skillet until tender. Combine the flour, sugar, salt and pepper. Slowly add the vinegar and water and mix well. Add to the cooked onion and simmer until slightly thickened. Mix all remaining ingredients in medium size bowl. Pour cooked mixture over potato mixture and toss lightly until well coated. Can be served hot or cold. Reheats beautifully. |
