GERMAN HOT POTATO SALAD 
6 med potatoes, boiled until tender
1 med onion, diced
2 cups cheddar cheese,shredded
8 slices thick bacon
1 1/2 cups Miracle Whip Salad Dressing
1 1/2 tbsp flavored wine vinegar
1 tsp yellow mustard
Salt and pepper to taste

Fry bacon until very crisp and reserve drippings. Sauté onion in bacon drippings until tender and clear. Remove from heat to cool slightly. Mix together vinegar (add more or less for desired "German" flavor) with yellow mustard and add onions. Stir constantly to prevent curdling. Cool onions to warm, then add Miracle Whip. Peel and slice potatoes. Coat bottom of small casserole with one third of mixture and cover with a layer of sliced potatoes. Add two more layers of mixture and potatoes for a total of three layers of each. Top with cheddar cheese. Crumble bacon over top.

Bake at 350°F until cheese is melted. Serve hot!
