HOT GERMAN POTATO SALAD 
2 1/2 lbs. red potatoes
4 slices bacon
1 med. onion, minced
3/4 c. chicken broth
1/4 c. tarragon vinegar with 1 tbsp. sugar and 1 tbsp. flour
2 tbsp. minced parsley
1 tsp. salt
1/2 tsp. pepper

Scrub and pierce potatoes. Cook on stove (boil them like you would for mashed potatoes). Cook bacon and lift out of the drippings. Cook onion in bacon drippings. Add potatoes, bacon, onion, broth and vinegar mixture, sugar and 1/2 tsp. parsley. Microwave on high 3 to 3 1/2 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
