HOT GERMAN POTATO SALAD | |
4 strips bacon, fried & cut into sm. pieces 2 tbsp. bacon fat 2 tbsp. flour 1 c. water 1/4 c. sugar 2 tbsp. vinegar 1 tsp. salt 3 to 4 c. diced, cooked potatoes Remove all fat from the fried bacon except the 2 tablespoons. Add flour, cook a minute or two. Add water. Stir and cook until thick. Add sugar, vinegar and salt. Stir in potatoes. Simmer a few minutes to blend flavors. (Potatoes boiled in jackets are especially good in this.) Using white potatoes, make a double batch and freeze in serving size portions. Warm in microwave. A recent trip to a New Ulm restaurant sent us looking for a Hot Potato Salad recipe. We found this in Grandma Intlekofer's cookbook. We enjoy the recipe and thank Grandma I. for sharing it many years ago! |
