HOT GERMAN POTATO SALAD 
4 strips bacon, fried & cut into sm. pieces
2 tbsp. bacon fat
2 tbsp. flour
1 c. water
1/4 c. sugar
2 tbsp. vinegar
1 tsp. salt
3 to 4 c. diced, cooked potatoes

Remove all fat from the fried bacon except the 2 tablespoons. Add flour, cook a minute or two. Add water. Stir and cook until thick. Add sugar, vinegar and salt. Stir in potatoes. Simmer a few minutes to blend flavors. (Potatoes boiled in jackets are especially good in this.)

Using white potatoes, make a double batch and freeze in serving size portions. Warm in microwave.

A recent trip to a New Ulm restaurant sent us looking for a Hot Potato Salad recipe. We found this in Grandma Intlekofer's cookbook. We enjoy the recipe and thank Grandma I. for sharing it many years ago!

Since microwave ovens vary in power, you may need to adjust your cooking time.
