PUFF PANCAKE 
1/2 c. flour
1/2 c. milk
2 eggs, lightly beaten
4 tbsp. butter
2 tbsp. confectioners sugar

Beat eggs first; add remaining ingredients. Pour into lightly greased pie or quiche pan. Bake for 20 minutes at 425 degrees. Fill with cooked bacon, eggs, or fresh fruit topped with whipped cream.
