PANCAKE PUFF 
1/2 c. water
1/4 c. butter
1/2 c. pancake mix
2 eggs

FILLING:

1 can pie filling
Whipped topping

Boil water and butter in saucepan. Add pancake mix. Stir vigorously until batter leaves sides of pan and forms a ball. Remove from heat. Beat eggs and add to mixture. Spread mix on bottom and sides of 9" greased pie pan. Bake at 400 degrees for 15 minutes; reduce heat to 300 degrees for 10 minutes. Spread filling on top of puff; top with whipped topping.
